Maui Summer Honey is made by the bees during the summer months between May and October. During this time the bees collect nectar from the Wilelaiki tree that grows on the forest edges and grass pastures on the leeward side of Haleakala. They also visit other secondary sources such as Glycine and Silky Oak. We harvest in November.  Our summer honey has a medium to light amber color and the flavor is mild, with simpler and light floral notes and a very subtle delicate spicy finish.

Maui Winter Honey is made by the bees during the winter months between December and April. During this time the bees collect nectar from the large forests of Eucalyptus on the North West slopes of Haleakala. They also visit many other secondary sources such as blackberry, glycine, Haole koa, Avocado, Silky Oak and Ohia Lehua. We harvest in April.  Our winter honey is darker in color, and its  flavor is complex with tones of butterscotch and caramel and heavier floral notes.
